Ruscalleda i Serra, CarmeCarme Ruscalleda (1952) abrió en 1988, junto con Toni Balam, el restaurante Sant Pau en Sant Pol de Mar. En 2004 abre el Sant Pau Tokio y en 2009, con su hijo Raül Balam, el restaurante Moments, en Barcelona. Su cocina creativa, mediterránea y basada en productos de calidad y proximidad, ha sido merecedora de cinco estrellas Michelin. Inquieta e innovadora, su afán de mejora continua la ha llevado a participar activamente en las jornadas Science & Cooking en la Universidad de Harvard, ha recibido numerosos premios y títulos en reconocimiento a una excepcional trayectoria gastronómica, entre los que destacan la Creu de Sant Jordi, el Premi d?Honor Lluís Carulla, la Medalla de Oro al Mérito en las Bellas Artes o la Medalla del Mérito al Trabajo. Recetas antiaging (Salsa Books, 2012) es su último libro.
